For those of you wondering how else you can get your avocado fat into your diet. I've tried this and it has been a favorite. It might even be good to try over fish.
Ingredients
½ pineapple, peeled, cored, and diced
2 TBS red onion or shallot, chopped finely
1 avocado, peeled, pitted and diced
1 jalapeƱo, or some habanero (if you are super brave), chopped finely
½ bunch cilantro, chopped finely
juice from ½ a lime
sea salt and pepper
